Basically there are three factors you should take into account when setting up a backup environment:

RPO (Recovery Point Objective)
As a business you must consider how far back you can afford to lose your data. According to the classical backup model one backup is made per day, but with new technology, a snapshot backup is taken every fifteen minutes. It is therefore a balance whether it is acceptable for your company to lose one days worth of data or fifteen minutes. -
RTO (Recovery Time Objective)
You must also consider how long the restore of the data can take. Restore from tape takes longer than for example re-reading the disk, which also must be taken into consideration. -
SLA (Service Level Agreement)
Something else to consider is how long your systems and applications may be unavailable for action. E-mail is an example of an area that is becoming more and more business critical, which means that these must always be usable.
